Chorizo And Parmesan Sauce For Pasta

Ingredients

2 tomatoes (or tin tomatoes) 100g(1⁄4 lb)

chorizo sausage (sliced)

1⁄2 Zucchini

1 clove garlic

1 tablespoon chopped parsley

1 tablespoon lemon juice

1⁄4 cup grated parmesan cheese

Oil for frying

Directions

1. Slice the zucchini and chop the tomatoes, garlic and parsley.

2. Heat oil in pan and fry the sliced chorizo sausage for about 5

minutes until crisp. Add all the rest of the ingredients and heat through.

 

Quinoa And Beans

Ingredients

1 cup beans (or tin)

3⁄4 cup quinoa

4 cups (2 x 500g jars) spaghetti sauce

2 cups spinach (fresh or frozen)

1⁄2 cup pine nuts (or any other type of nuts)

Directions

1. In a pan cook the quinoa.

2. Chop up the spinach and add to the pan along with the beans, spaghetti sauce and spinach.

3. Add 1⁄2 cup water and heat through.

4. Stir in the pine nuts and serve.
